Tajine marocaine with chicken and olives

"Tajine with chicken and olives" for 3 people

This recipe is from Moroccan cuisine and is one of my favourite. It is very easy to prepare and very flavoured.
Tajine is a dish used in the countries from North Africa and is formed entirely of a heavy clay which is sometimes painted or glazed.
It consists of two parts:
- a base unit which is flat and circular with low sides
- and a large cone or dome-shaped cover that rests inside the base during cooking. The cover is so designed to promote the return of all condensation to the bottom. With the cover removed, the base can be taken to the table for serving.



If you don't have this dish you can use a large pan with teflon buttom and follow the same steps for preparation.

For ingredients you will need:

3 upper legs of chicken
2 carrots (cut half of quantity in circles (rondelles) and the other half cut it in sticks)
3 potatoes (cutted into thick slices)
1 or 2 tomatoes
olives (the quantity it depends on you)
3 onions (cutted rondelles)
4 cloves of garlic (crushed)
olive oil
Spices

turmeric (curcuma in french, it has many benefits like antioxidant, anti-inflammatory, antibacterial, stomach-soothing, liver and heart protecting effects. It is used in treatments for arthritis and cancer) - 2 table spoons
salt - for your taste
black pepper - 1 table spoon
paprika - 1 table spoon
ginger (helps to prevent or treat nausea and vomiting associated with motion sickness, pregnancy and cancer chemotherapy. It is also used as a digestive aid for mild stomach upset, as support in inflammatory conditions such as arthritis, and may even be used in heart disease or cancer ) - 2 table spoons
coriander (helps in anemia, digestion, menstrual disorders, small pox, eye care, blood sugar. skin disorders) - 1 table spoon
cumin (it helps in flatulence, indigestion, diarrhea, nausea, morning sickness, and atonic dyspepsia, anti carcinogenic, great tonic, it increases the heat of the body, ) - 2 table spoons
green parsley (it helps to clean the blood, dissolves sticky deposits in veins, maintains elasticity of blood vessels, facilitates removal of moderately sized kidney and gallstones, treats deafness and ear infections, and benefits the sexual system)
How you prepare it

- Place the tajine pot on a very low fire and when the pot is getting hot you can add oil.
- When oil is hot add 80% from onions and the carrots sliced rondelles and cover. Save few slices of onion and carrot for later. Mix all with a spoon from time to time.
- When the onion is soft add the chicken and crushed garlic. Mix all from time to time for 5 minutes.
- Add the spices and mix everything.
- Add half cup of water (we put water to prevent burning) and mix again all. Cover the tajine for 10 minutes.
- Add potatoes in circle layers and decorate with carrots cutted into sticks. Add more spices (salt, pepper, cumin) and a cup of water.

- Cover and let it cook for 30 minutes.
- Add onion slices that you already saved, tomatoes, olives and green parsley. Taste the sauce. If you want more spices it's your choice, you are free to add more and cook it for your taste.


- Cover and let it cook for 15 minutes.

Tips
If you want to add more water after you already added potatoes and other ingredients, add it on the sides of tajine. Because if you would add water in the center or on the surface you will wash all the spices from potatoes, tomatoes so on.
